T5-family runner — embeds sequences through
candle_transformers::models::t5::T5EncoderModel.
One runner serves ProtT5 and Ankh because they differ in nothing this code
cares about: same architecture, same residue alphabet and ids, same
EOS_ONLY token layout. What differs is dimensions and the FFN activation
(Ankh is gated-gelu), and both of those come from the checkpoint’s own
config.json.
